During this period of unprecedented demand for our organic meat and difficult working conditions (due to social distancing), we are simplifying our range and we will not be smoking our bacon or hocks - but look forward optimistically to resuming this for you in the not too distant future !
Our traditional organic oak smoked pork hock is made from our free-range rarebreed and rarebreed cross pork from our own pigs reared here on Peelham Farm. We smoke them in our own on-farm smokery with oak shavings. Our smoked pork hock is slowly dry cured by hand and is nitrite-lite ie the minimum amount of Sodium nitrite as part of a traditional sea salt and organic cane sugar cure. Nothing else - no cure accelorators, no flavour enhancers, no colourants, no colour fixers ! And naturall smoked too - none of that 'spray-on' and artificially flavoured stuff !!
