Organic Smoked Gammon - Dry-cured

We traditionally dry-cure our organic smoked gammons by hand on the farm and smoke them in the farm smokery, with oak shavings sourced locally.  

Our dry cure consists of sea salt, organic cane sugar and the lowest possible amount of Sodium nitrite (no nitrates). On testing the nitrite content is significantly reduced after curing and even more so after cooking leaving minimal nitrite residue.
