Our traditional organic pork hock is made from our free-range rarebreed and rarebreed cross pork from our own pigs reared here on Peelham Farm. Our pork hock is slow dry cured by hand and is nitrite-lite ie the minimum amount of Sodium nitrite as part of a traditional sea salt and organic cane sugar cure. Nothing else - no cure accelorators, no flavour enhancers, no colourants, no colour fixers !
