Mutton is a beautiful meat and nutritious too. Our organic Mutton Leg Steaks as with all our mutton are prepared by our in-house butchers here on Peelham farm from our own pastured mutton flock.
Mutton is particularly good with strong tasting spices.
Try this for a recipe (Courtesy Georgina Campbell's Ireland), to feed two:
2 gigot chops
Table spoon of smoked paprika Clove garlic, crushed Dollop of olive oil Salt and freshly ground black pepper to-taste
Make a marinade of the paprika, garlic, olive oil and seasoning. Pour overthe chops in a dish and Leave for at least half-an-hour longer if you have it.
Heat a pan or barbecue and cook for 5 minutes on each side, depending on thickness, until golden.
