Our mutton ewes are 3-5 years old and are no longer used for breeding. They have darker fattier meat than lamb. As seasonal and grass-grazed only, our mutton is in stock mainly from late August through to May time. The mutton joints make fantastically flavoured slow-cooked dishes. We also use our mutton legs to make our award-winning Air-dried Smoked Juniper Mutton charcuterie.
