As seasonal and grass-grazed only, our mutton is in stock mainly from late August through to May time which is why it is currently all out-of-stock. This is with the exception of our Air-dried Smoked Juniper Mutton as this has been cured from mutton available 4-6 months ago.
Our mutton ewes are 3-5 years old and are no longer used for breeding. They have darker fattier meat than lamb. The mutton joints make fantastically flavoured slow-cooked dishes. We also use our mutton legs to make our award-winning charcuterie.
