Low nitrite needn’t mean there should be any compromise on taste. Our delicious slow, dry-cured organic gammon and bacon are made from our free-range organic pigs. Although nitrate free and immeasurably low nitrite, we are able to deliver that same great taste with a no nitrates and a significantly lower amount of nitrites - making our range healthier than comparable products on the market!

We do not use any nitrates in our bacon curing. We use a very low level of nitrites instead, which are safer. After cooking one of our delicious gammon and bacon products, the nitrite levels present in the meat is reduced to less than seven part per million - that is comparable to a stick of celery or beetroot!
We home-cure our gammons and bacon thoroughly and carefully by-hand, using a traditional cure with sea-salt, organic cane-sugar and the lowest possible sodium nitrite content (50 ppm as opposed to 250ppm used by mass producers of ham for supermarkets) and approved by the Soil Association.
Sodium nitrite is an important constituent in a curing salt as it prevents the occurrence of Botulism. Our ham and bacon are 'nitrite-lite’, resulting in a healthier yet just as tasty option for you to enjoy.
We don’t inject them or immerse them in brine. Neither do we use cure-accelerators, colorants or colour-fixers. The result of using only 50ppm of sodium nitrite is a soft natural pink colour when cooked which naturally fades sometimes to a faded grey-pink when exposed to light and particularly once sliced.
We smoke naturally in our on-farm smokery, using untreated oak shavings from the Scottish Borders.
We are certified organic and only produce 100% free range pork, with a commitment to high animal welfare.
