Our Organic Pork Salamis are made here on our farm from our organic and free range pigs (Tamworth x Red Duroc cross and White Duroc cross).
We use our own gluten-free and lactose-free recipes. We don’t uses any Nitrates but the minimum of Sodium nitrite (E250), in our pork salamis only. This ensures that there is the minimum if any residue remaining once curing is complete and they are ready to eat.
We use NO preservatives (other than sea salt), in our beef droewors salamis and lamb droewors salamis. We use NO preservatives (other than sea salt), in our Air-dried meats (including the pork air dried meats such as Lonza, Coppa, Pancetta).

Our Organic Veal Salami with White Wine & Star Anise won two Golds at the 2019 Great Taste Awards;
The stars which won the 2015 Scotland Food & Drink Excellence Award, include our mild ‘Classic’ Salami with Red Wine (also described by Carlo Petrini, Slow Food founder when he sampled some on a trip to Scotland as ‘Salame Bellissimo’ !); Our herb-rich Salami with Fennel, and our dark richly flavoured Chorizo. Our smokey Nduja was a finalist in the British Cured Meats Awards 2018
