Here at Peelham we have developed a distinctive and multi-award winning range of organic charcuterie which we have been making from our free-ranging pigs, sheep and beef on our organic farm for the last 15 years. Air-dried salamis and hams are slowly cured in the natural air-flow of our on-farm curing facilities. Our salamis are made in natural casings with our own sea-salt based cure without the need for a lactose-based starter cultures, No flavour enhancers, No cure accelerators, No pre-mixes, No artifical emulsifiers. Lactose and Gluten-free. We dont use Nitrates in any of our products. We use the minimum Sodium nitrite (E250) in our pork salamis only ensuring the minimum if any residue remaining once the curing is completed. We dont use Sodium nitrite (or any preservative other than sea salt), in our Air dried Meats or our beef or lamb droewors.
