Cured and sliced pigs cheek now this really is different !
All of our bacon from our rare-breed pigs (mostly Tamworth and some Berkshire), is dry-cured by hand piece-by-piece in our on-farm butchery for 8 days, to produce delicious mildly cured pieces which fry 'dry' and crisp !
Cheek bacon is 'stretchy' and cut slightly thicker than back or streaky and works wonderfully draped over terrine or a meat loaf.
