In our opinion this is the best joint of pork to roast because it has more marbelling than leg.  Be brave and cook it REALLY SLOWLY  on the bone like one of our other customers who cooks it overnight for 16 hours at 80degrees - having first heated the oven to 'very hot' to kill bacteria.  With fresh sage chopped and inserted under the skin and salt and pepper this simply makes a divine meal to have with special friends and family of course !

"I have to say the pork was just as good as last time, not even fussy teenagers left any on their plates, including one who said she didn't like pork. Roasted, on a rack over stock with a splash of Sherry, at 230C for 45mins then 14hours at 80C - heaven on a plate!"
