Another classic roasting joint which with our rare-breed pork gives you a delicious reward for relatively little effort: Go for a one-pot dish but first pre-heat to a hot oven (240degC), rub a thin layer of butter onto the pork skin followed by a sprinkling of salt and pepper, followed by 30mins in your hot oven. Having rubbed your selected veg (potatoes, carrots, shallots or onions, halved apples etc) with oil put these into your roasting dish around the joint and return to the oven and reduce the heat to 190degC for approx 50mins. Make gravy using honey, mustard and ale pre-mixed and added to the juices and bits of veg in the roasting tin.
