Loin of pork is the classic roasting joint - but you must have fat to get flavour and none better than one of our rare-breed outdoor joints.  We recommend a simple german recipe used by Christopher Trotter (The Whole Hog) which can also be used for loin on the bone; Salt and pepper onto the whole joint and than drape with Peelham bacon (shoulder or streaky) to roast slowly at 140degC for 3-4hrs.  Remove the bacon and while you are making the gravy (and adding the chopped-up bacon), brown the joint under a hot grill before leaving it to rest for 20 mins before serving.
