Leg of Peelham pork on the bone is best roasted to make the most of the robust flavour of our rare-breed out-door Tamworths (and occasionally Berkshires). Maw Broon and Hugh Fearnley-Whittinstall reckon on approx 25-30mins per 500g. So do we. We score the skin for you. All you have to do is rub in the butter followed by sage, salt and pepper. Hot sizzle for 20mins (210-230degC) and than down to 160degC for the remainder. Serve with roasted pots, apple sauce and Maw Broon recommends butter beans !
