Our organic grass-fed mutton shoulder is perfect for slow cooking and roasting.  Here at Peelham we love it slow pot-roasted for 3 hours so that the meat falls apart onto the plate.  Half-way through cooking throw-in your root vegetables and potatoes with a scattering of rosemary.
