All of our veal is field-raised, on grass and on their own mothers naturally as part of a cattle herd.

It is slightly darker than conventional dairy veal (or rose veal), which is why we call ours 'ruby' veal.

Our ruby-veal fillet is exquisite and particularly good for Chateaubriand.
