Lleyn Mutton

Mutton is back in fashion and our mutton is the real thing !   3 to 5 year old ewes which have only ever grazed our organic grass and clovers.  We hang the carcasses for two weeks at 2 degrees in our organic butchery to produce a beautiful dark red well marbled and tender meat to create those fantastic flavoured, charcterful dishes which so sustained our forebears. Slow-cooking releases those charcterful and robust flavours from the mature marbling of fat.
