Our organic Mutton Ham is a naturally dry-cured leg of mutton done in our butchery. A traditional Scottish lowland meat (as it was probably in most of rural Britain), we use a mild salt-cure to make a delicious pot-roasting or boiling joint. We advise a slow simmering boil for 2hrs per kg. In the last hour throw in your tatties and root veg to serve-up a typically rural and frugal dish. Use the stock to make a caper sauce .... Yum !
