Peelham's organic cattle are grass-fed throughout the year to produce a beautifully slow fattened beef. We use Aberdeen Angus and Luing (another native Scottish breed), as our core breeding stock which add to the excellent flavour with an even distribution of intra-muscular fat. Our cattle graze our upland coastal pastures throughout the year other than over-wintering calving cows and young cattle which are sheltered in straw-bedded open barns. Winter-housed cattle are fed our naturally fermented grass harvested during the summer to create a dry silage. Our cattle are not grain-fed other than the rare occasion when a cow feeding a calf requires an energy boost from own home-grown organic barley. Carcasses are aged for four weeks to make the most of the flavour imparted by the grass-rearing and the breeding.
