Our organic ham slices are made from free range Tamworth pigs reared here on Peelham farm. Their uniquely dark pork with its fine lacing of fat through the muscle make a delicious and succulent cooked ham. We sell our ham in packs of 200g, with 4-5 slices per pack. We dry cure the ham in the traditional way, applying salt by hand to each piece before leaving it to cure and simmer for up to 8 hours.
Our hams are ‘nitrite-lite’ as we use the lowest possible Sodium nitrite content of 80 parts per million as part of our dry-cure mix which is approved by the Soil Association (our certifiers). This results in our ham retaining a soft natural pink colour.
