Organic Charcuterie & Salamis

Here at Peelham we have developed a distinctive and multi-award winning range of organic charcuterie which we have been making from our free-ranging pigs, sheep and beef on our organic farm for the last 15 years.  We have adapted centuries old European methods to produce an authentic British charcuterie. Air-dried salamis and hams are slowly cured in the natural air-flow of our on-farm curing facilities.  Our  salamis are made in natural casings with our own sea-salt based cure without the need for a lactose-based starter cultures, No flavour enhancers, No cure accelerators, No pre-mixes, No artifical emulsifiers. Lactose and Gluten-free. A truly 'free-from' and gluten-free UK charcuterie.

This years winners of the Scotland Food and Drink Excellence Award (red meat sector), our organic salamis include a mild 'Classic' made with red-wine infused with fresh garlic and a hint of nutmeg; A complex flavoured herb-rich fennel with taste-bud 'bombs' of green and red pepper corns; A delicate South African 'Droewors'-style 'beef salami stick with coriander; Our chorizo is dark, richly flavoured and packed with smoked pimento; our latest addition is a tangy Lamb and Cumin Seed Salami stick with a wee 'kick' to it !

Our organic air-dried  mutton is cured with sea-salt and juniper and lightly oak-smoked in our on-farm smokery. It makes a delicately flavoured mutton-prosciutto which goes well with a peaty dram !  Made from our grass-fed organic Lleyn and Lleyn x cross mutton ewes it has genuine 'Scottish Terroir'.  It was given the 'Best Taste Award' at the Soil Association 'Dragons Den' (2014) where the judges described it as '..the most gastronomically promising product of the day' with its 'rich, mature, mellow and distinct lingering taste'.

Made from our organic and free-ranging Tamworth and Tamworth x Duroc pigs, Peelham Air-dried Prosciutto Ham was awarded Great Taste Gold (2012) and Best Product at the Scottish Speciality Fine Food Fair (2014) for its smooth and full flavour with the creamy Tamworth fat imparting a particularly intense richness.
