Organic Liver Recipes

Denise demonstrated these two recipes today at Berwick's Food and Beer Festival

RECIPE FOR

Pork Liver in Honey

NUTRITIOUS, DELICIOUS, AFFORDABLE

 (Costing less than £1.00 per portion)

GET: (Organic only !)

1 x 250-300g pack of Peelham Organic Pork Liver

Cup of white flour

2 x Spoons of Honey

1 x  Juice from Lemon

1 spoon of butter

1 spoon of lard

Herbs to flavour (recommend thyme –not essential)

Salt and Pepper

 

The liver cooks very quickly so have everything ready before you begin cooking

 

DO:

1). Slice the liver finely

2). Season the flour with salt, pepper and herbs

3). Dust the sliced liver in the flour

4). Melt butter and lard in frying pan

5). Once butter and lard begin to bubble quickly fry the liver until it browns

6). Remove liver from pan and excess fat – keep the liver warm

7). Put lemon juice in pan followed by the honey

8). Once they bubble toss the liver into pan and quickly coat the liver

 

TO SERVE:

Brown rice and salad or with toast !

 

 

RECIPE FOR

Lamb’s Liver for the Autumn

NUTRITIOUS, DELICIOUS, AFFORDABLE

 (Costing less than £2.00 per portion)

GET: (Organic only !)

1 x 250-300g pack of Peelham Organic Lamb Liver

Cup of white flour

2 x Spoons of any autumn fruit jelly (Rowan, Cranberry, Quince, Apple, Bramble)

1 spoon of butter (Olive oil too if you have any)

Juice of 1 lemon

Mint Herbs to flavour (not essential)

Salt and Pepper

 

The liver cooks very quickly so have everything ready before you begin cooking

 

DO:

1). Slice the liver finely

2). Season the flour with salt, pepper and herbs

3). Dust the sliced liver in the flour

4). Melt butter in frying pan

5). Once butter begins to bubble quickly fry the liver until it browns DON’T BURN THE BUTTER !!

6). Remove liver from pan and excess fat – keep the liver warm

7). Put lemon juice in pan followed by the fruit jelly

8). Once they bubble toss the liver into pan and quickly coat the liver

 

TO SERVE:

Brown rice and salad or with toast !
