A leg of Peelham lamb carefully boned and butterflied so that it marinades and than BBQs or roasts evenly and quickly.

If you like it french-style and 'pink' in the middle then bbq for 35-45 mins turning regularly, and than longer to taste. Or oven roast at 180 degrees for similar lengths of time but without turning.
